Berry Bites

Take the time to try these delicious guilt-free sweet treat recipes from I Quit Sugar and Simplicious, and you'll soon come to realise that there's blissful indulgence to be found in sugar-free eating too. Just remember the golden rule: everything in moderation!
Ingredients
1 ' cups shredded coconut 1 tablespoon rice malt syrup 1 tablespoon coconut oil (melted) 2 tablespoons coconut milk 1 teaspoon pure vanilla extract ' cup raspberries or cherries (fresh or frozen) 1 cup chopped raw or dark (85% - 90%) chocolate
Method
  1. Line a baking tray with baking paper.
  2. Place all the ingredients (except the chocolate) in a food processor.
  3. Pulse until the mixture comes together but still has texture.
  4. Roll tablespoons of the mixture into balls, place on the baking tray, and freeze for at least 1 hour.
  5. Meanwhile, melt the raw or dark chocolate in a heatproof bowl over a saucepan of boiling water on the stove (making sure the base of the bowl doesn't touch the water).
  6. Remove the coconut balls from the freezer and roll them in the melted chocolate so they are completely coated.
  7. Return the balls to the lined tray and allow to set in the fridge for 30 minutes before serving.
