Blueberry Cake

250 g flour

20 g corn starch

8 g baking powder

150 g sugar (coconut, rapadura and caster all work well) 

1 tsp vanilla extract

pinch of salt

100 ml sunflower oil

175 ml Rude Health Oat Drink (or Tiger Nut Drink for a prebiotic boost)

130 g blueberries


1.     Pre-heat the oven at 175 degrees

2.     Cover the baking tin with baking paper or grease it

3.     Mix the dry ingredients together. Whisk with a mixer or whisk and add the oil and Oat Drink. Add the blueberries, carefully spread them through the dough, and scoop the mixture into the baking tin

4.     Bake for approx. 45 minutes, until golden brown. Let it cool down on a roster
