  • Massaman curry is a rich, relatively mild southern Thai curry that influenced by Malay and Indian cuisine.

Description

Its name is derived from the Malay word masam, which means “sour.” The flavors of the massaman curry paste come from spices that are not frequently used in other Thai curries.

Ingredients

Cardamom, cinnamon, cloves, star anise, cumin, bay leaves, nutmeg, and mace are combined with dried chili peppers, cilantro (coriander) seeds, lemongrass, galangal, white pepper, shallots, and garlic to make the massaman curry paste

Directions

Packaged in a 220g glass bottle. Use one teaspoon of curry paste per two servings. Once opened store in the fridge.

Activation stations, everybody!

 

The activation process involves soaking the nuts and seeds to stimulate the sprouting process, and then airdrying them at a low temperature. This process breaks down problematic compounds (called phytates) that would otherwise decrease the bioavailability of the nutrients in the nuts and seeds, meaning our bodies can more easily absorb all the available vitamins and minerals. Activation also ensures the nuts and seeds are gentler on the digestive tract.
