Chocolate Goji Berry Brownies by Finding Frost

Take a delicious sweet brownie and load it with superfoods by adding goji berries, raw cacao powder and chia seeds. Goji berries are an excellent source of antioxidants and cacao powder goes the extra mile with its super antioxidant properties and nutrient-dense mineral content. Chia seeds are trending as a plant-source of omega 3 fatty acids and are an excellent anti-inflammatory. Combine these wonders into a yummy guilt-free chocolate brownie and you have a winning formula.
Ingredients
4 Tbsp cacao powder 4 Tbsp gluten free flour or flour of choice 1 tsp baking powder 2 Tbsp almond flour Pinch of rock salt 2 Tbsp chia seeds, pre-soaked 2 eggs
Method
  1. Preheat the oven to 180 degrees Celsius.
  2. Sift all dry ingredients/flours into a mixing bowl.
  3. Add the honey, chia seeds and rock salt and stir to combine.
  4. Fold in the eggs before adding the nuts, goji berries and dark chocolate chips.
  5. Line or grease a baking dish to prevent sticking. Using a bread dish is the perfect size.
  6. Spoon mixture into the dish, using a spatula to make sure none is left behind.
  7. Bake for 20 minutes
