Coconut Chocolate Quick Muffin

Wheat Belly (Rodale) author William Davis has created a wonderful selection of tasty, healthy, gluten-free meals that can be made in 30 minutes or less.
Ingredients
' cup All-Purpose Baking Mix 2 teaspoons unsweetened cocao powder 1 tablespoon unsweetened shredded coconut ' teaspoon ground cinnamon Sweetener equivalent to 2 tablespoons sugar Pinch of sea salt 1 egg 2 tablespoons milk 1 tablespoon butter, melted
Method
  1. In a medium bowl, combine the baking mix, cocoa, coconut, cinnamon, sweetener, and salt.
  2. Whisk in the egg.
  3. Add the milk and butter and whisk thoroughly.
  4. Use a rubber spatula to scrape the mixture into a large mug.
  5. Microwave on high for 2 minutes, or until a wooden pick inserted in the centre comes out clean.
  6. Allow to cool.
