One-Pot Broccoli Pasta

Ingredients
  • 10ml olive oil
  • 2 cloves garlic, minced
  • 500ml vegetable stock
  • 400ml Wellness Warehouse Organic Coconut Cream
  • 400g Garolalo Gluten-Free Pasta
  • 350g broccoli florets
  • Black pepper to taste
  • Wellness Warehouse Nutritional Yeast for serving
  • Fresh parsley for serving
Method
  1. In a large pot over a medium high heat, add the olive oil and garlic.
  2. Cook for 1 minutes and then add the vegetable stock and coconut cream.
  3. Bring to a boil and then add the pasta, broccoli florets, and black pepper.
  4. Lower heat and simmer for 12 - 15 minutes, or until pasta is just cooked.
  5. Serve with nutritional yeast and fresh parsley, and enjoy!
