Chai Spiced Granola


-     4 cups rolled oats

-     2 cups chopped pecan nuts

-     1 cup raw mixed nuts

-     1 cup coconut flakes

-     2 tsp cinnamon

-     1 tsp nutmeg

-     1/2 tsp ground cloves

-     1/2 tsp ginger

-     1/4 cup coconut oil, melted

-     1/2 cup honey or agave nectar

-     1 tsp vanilla essence

  1. Preheat the oven to 150ºC and line a large baking sheet with baking paper.
  2. In a large mixing bowl, combine the rolled oats, pecan nuts, mixed nuts and coconut flakes.
  3. Add the cinnamon, nutmeg, ground cloves, and ginger.
  4. Mix until the spices are well incorporated.
  5. In a separate small bowl, combine the coconut oil, honey and vanilla essence.
  6. Add the wet ingredients to the granola mixture and mix well.
  7. Spread the mixture out on the baking sheet.
  8. Bake the granola for 30 - 40 minutes, making sure to toss the mixture half way.
  9. Remove from the oven and allow to cool before storing in an airtight container.
  10. Serve with milk, yoghurt, or fresh fruit.
