Easy Lunchbox Ideas

Ingredients

AVO CHICKPEA SANDWICH

  • ½ an avocado
  • ¼ cup chickpeas
  • 1 lemon
  • salt and pepper
  • salad leaves
  • 2 slices of bread

FALAFEL SALAD

  • salad leaves
  • bell pepper, chopped
  • feta cheese, chopped
  • falafels
  • your favourite dressing

GRAIN SALAD

  • ½ cup red quinoa
  • ⅓ cup chickpeas
  • ⅓ cup bell pepper, chopped
  • ¼ cup fresh parsley, chopped
  • 1 spring onion, sliced
  • mixed seeds
  • 1 lemon
  • olive oil
  • salt and pepper
Method

AVO CHICKPEA SANDWICH

  1. Mash the avocado and chickpeas together in a bowl until creamy.
  2. Add a squeeze of lemon juice and salt and pepper for seasoning.
  3. Spread the mixture over a slice of bread and top with salad leaves and a second slice of bread.
  4. Add the sandwich to your lunchbox with other snacks, such as nuts and dates.

FALAFEL SALAD

  1. Add a bed of salad leaves to your lunchbox.
  2. Top with bell peppers, feta cheese, and falafels.
  3. Pack your favourite dressing to drizzle over when ready to eat and pair your salad with other lunchbox goodies like fresh fruit.

GRAIN SALAD

  1. Add the red quinoa and chickpeas in your lunchbox.
  2. Layer the bell pepper, parsley, spring onion, and mixed seeds on top.
  3. Drizzle with lemon juice and olive oil.
  4. Season, add other lunchbox goodies, and enjoy!
