Gluten Free Choc-Quin Cake

Quinoa Chocolate Cake is a lighter and healthier version of everybody's favorite dessert!

2 cups cooked organic quinoa 1/3 cup almond or coconut milk 4 organic eggs ' cup coconut oil 1 tsp vanilla extract ' cup coconut sugar ' cup raw cacao powder 1tsp baking powder ' tsp baking soda ' tsp himalayan salt
  1. Heat the oven to 180 degrees Celsius.
  2. Grease a medium cake tin.
  3. Melt the coconut oil on low heat and add the quinoa, milk, eggs and vanilla. Mix really well until you have a consistent smooth result. Use a processor if you have one.
  4. Add the cacao, baking powder, baking soda and salt.
  5. Bake for about 40 minutes. Leave to cool completely before removing from the pan otherwise it will crumble.
  6. Cover the top with coconut cream as a healthy frosting
