YOGA KITCHEN CARROT & PEANUT SOUP

Serves 4

INGREDIENTS

*10 carrots

*3 cloves garlic

*1 400 g tin coconut milk

*2 TBSP red curry paste

*1 tsp turmeric

*1 TBSP fresh ginger, finely grated

*Salt to taste

*3 cups vegetable stock

*2 TBSP peanut butter

*Large roasted peanuts and spicy chilli sauce to garnish (optional)

METHOD

1. Wash, peel and cut the carrots into 4 cm thick slices.

2. Heat some coconut oil in a soup pot and fry the onions until soft.

3. Add the carrots, crushed garlic and ginger, stirring frquently for a further five minutes.

4. Add the stock, coconut milk, red curry paste and salt, and cook for 35 minutes.

5. Remove the soup from the heat and let cool for two minutes.

6. Add the peanut butter and blitz with a hand blender until a smooth consistency is reached.

7. Serve with a drizzle of spicy sauce (optional), and garnish with roasted peanuts.

CHOCOLATE MACADAMIA FUDGE

INGREDIENTS

*140 g dark chocolate

*½ cup date syrup

*1 cup macadamia butter

METHOD

1. Melt the chocolate into the date syrup in a small saucepan.

2. Once the chocolate has melted, add the nut butter and mix into a smooth, silky consistency.

3. Pour into a fudge mould and place in the fridge for four hours

ALMOND BANANA SMOOTHIE

Serves 2

INGREDIENTS

*500 ml almond milk

*2 TBSP almond butter

*4 TBSP oats

*2 bananas

*1 tsp cinnamon

*Honey to taste

*2 - 3 ice cubes

METHOD

1. Slice two bananas and add to a blender.

2. Add four tablespoons of oats and two tablespoons of almond butter.

3. Add the ice, a teaspoon of ground cinnamon and honey to taste.

4. Pour in the almond milk and blend all the ingredients until a smooth liquid is formed.

HAZELNUT HOT CHOCOLATE

Serves 2

INGREDIENTS

*400 ml hazelnut or coconut milk

*2 TBSP maple syrup

*4 tsp cacao powder

*2 tsp hazelnut butter

*1 tsp cinnamon

METHOD

1. Pour the hazelnut or coconut milk into a pan.

2. Add the other ingredients.

3. Heat gently, stirring as you go.

4. Remove just before boiling.
