Make Up Some Za'atar

Za'atar is an aromatic and ancient spice mix used as a condiment and flavourant on everything from bread and meat to chicken and veggies. It's an Arabic word that means thyme. Although it's available ready made, you can also make it yourself. Here's a blend that uses fresh oregano. This variety keeps for a few weeks. Try it out on labneh, dunked with olive oil and bread, in cooked meat and chicken dishes, on veggies and many other variations. 
*1 TBSP chopped fresh oregano  *1 TBSP sumac  *1 TBSP ground cumin  *1 TBSP sesame seeds  *1 TSP kosher salt  *1 TSP freshly ground black pepper 
Use a pestle and mortar to grind and mix everything together. Keep in a closed and secure container.
