Pumpkin & Coconut Muffins

Take the time to try these delicious guilt-free sweet treat recipes from I Quit Sugar and Simplicious, and you'll soon come to realise that there's blissful indulgence to be found in sugar-free eating too. Just remember the golden rule: everything in moderation!
  1. Preheat the oven to 190'and lightly grease 15 cups of a muffin tray.
  2. Grate the pumpkin (preferably with a food processor).
  3. Add the flour, almond meal, stevia, basil, baking powder, vanilla powder and spices to the pumpkin.
  4. Whisk the eggs in a separate bowl, then use a wooden spoon to stir the eggs and coconut oil into the pumpkin mixture until the lumps are gone.
  5. Gently stir in the walnuts.
  6. Add coconut water, stirring, until the batter is thick.
  7. Spoon into the muffin tray and bake for 15 ' 20 minutes.
  8. Serve warm or cold.
While xylitol, stevia and rice syrup are well-known substitutes for sugar and okay when used in moderation, you can also consider treating yourself to something like a bit of coconut sugar, barley malt syrup or yacon syrup when you're allowing yourself an indulgent but slightly healthier treat from time to time.
