Raw Caramel Cup

Base: 1 cup soaked cashews 1/2 cup coconut flour 1 cup pitted dates 1 tbsp honey 1 tbsp coconut oil Middle Layer: 1 cup pitted dates 3 tbsp unroasted nut butter 1 tsp salt 1 tbsp water Chocolate Layer: 1/2 coconut oil 1/2 cacao powder 2 tbsp honey
  1. Process the soaked cashews into small pieces
  2. Add the rest of the ingredients and process until a sticky dough forms
  3. Press into ramekins and freeze for 2 hours
Middle Layer:
  1. Process all ingredients until a smooth consistency
  2. Spread on top of base layer
  3. Freeze for 1 1/2 - 2 hours
Chocolate Layer:
  1. Melt all the ingredients
  2. Coat the entire middle layer
  3. Add garnishes
  4. Freeze for 1-2 hours or until set
  5. Remove from freezer and allow to breathe for a few minutes before eating
