Spicy Roasted Nuts by Finding Frost

Be sure to make more than you think you will need as these tasty nuts are usually gobbled up with gusto. They're dinner party favourites and perfect cocktail additions. Spices add excitement and also help with digestion.
1 egg white or 1 Tbsp coconut oil 1 tsp cayenne pepper 1 tsp cumin 1/4 tsp all spice 1 tsp cinnamon 1/2 tsp chilli flakes 2 sprigs fresh rosemary 1/2 tsp rock salt 2 1/2 cups mixed, raw nuts
  1. Preheat the oven to 180 degrees Celsius.
  2. Beat egg white until soft and foamy (there should be no visible liquid left in the bowl). Vegan alternative: use coconut oil instead of egg whites.
  3. Add spices and mix well, then toss the nuts until they're well coated.
  4. Spread nuts in a single layer on a baking tray.
  5. Bake for 20 - 30 minutes, checking on them every 5 minutes.
  6. Toss nuts every 10 minutes, to make sure they don't burn.
Optional: Add raisins once the nuts are out of the oven. Play around with different spice combinations, try a sweet version with vanilla, cardamom and cinnamon.
