Tomato & Basil Soup

This fresh tomato soup from will beat any pre-packaged soup out there. 

1 Tbsp coconut oil
2 onions, chopped
8 tomatoes
2 1/2 cups water
1tsp balsamic vinegar
1Tbsp sweet basil, finely chopped
Sea salt and black pepper to taste
Cayenne pepper to taste

Fry onion in coconut oil for 2 - 3 minutes or until softened.
Add tomatoes and cover with water. Bring to boil, reduce heat and simmer for 15 - 20 minutes.
Add vinegar and cook for 10 minutes.
Leave to cool before adding basil and liquidizing. 
Enjoy hot or cold at any time of the day.
