Vegan Granola

Ingredients

1/3 cup maple syrup
1/2 cup Wellness Warehouse Peanut Butter
2 tsp vanilla essence
1/2 tsp salt
2 tsp ground cinnamon
1 cup mixed nuts, roughly chopped
2 cups rolled oats
1/2 cup pumpkin seeds
1 cup coconut flakes

 

Method

1. Preheat the oven to 150C and spray a baking sheet with non-stick spray.
2. In a large mixing bowl, whisk together the maple syrup, peanut butter, vanilla essence, salt,
and ground cinnamon.
3. Once well combined, add the nuts, seeds, oats, and coconut flakes.
4. Use a wooden spoon to mix and coat evenly.
5. Add the granola mixture to the prepared baking sheet and spread out into an even layer.
6. Bake for 20 minutes and then remove from the oven and use a spatula to mix the granola and
then bake it for a further 10 minutes.
7. Serve as desired; store leftovers at room temperature for up to one month.
