Vegan Pad Thai

2 tbsp sesame oil
1 cup tofu, cubed
2 tsp crushed garlic
1/2 cup tamari soy sauce
1/4 cup coconut sugar
3 tbsp sriracha sauce
Juice of 1 lime
225g Pad Thai rice noodles, cooked according to package instructions
1/2 bell pepper, sliced
1 small bunch of spring onions, sliced, divided
1 cup bean sprouts
1/3 cup Wellness Warehouse Peanuts
Red chilli for serving
Lime wedges for serving



1. Fry the tofu in sesame oil in a frying pan over medium heat for 5 minutes.
2. Add the garlic and fry for 1 minute.
3. Add the Tamari soy sauce, coconut sugar, lime juice, and sriracha sauce and cook for 1
4. Mix in the noodles, and then add the bell pepper, half the spring onion, bean sprouts and
5. Mix together and cook for 2 minutes.
6. Add to serving bowls and garnish with red chilli slices, lime wedges and a sprinkle of sliced
spring onion.
