Mediterranean Chickpea Salad


• 2 cans chickpeas

• 2 cups cherry tomatoes, halved

• 1/2 cucumber, chopped

• 3/4 cup black olives, sliced

• 1/2 red onion, diced

• 3/4 cup fresh parsley, roughly chopped

• 3 TBSP Wellness Warehouse Ultimate Seed Mix

• 1/2 cup feta cheese, crumbled


• 1/3 cup olive oil

• 1/4 cup white wine vinegar

• 2 cloves garlic, crushed

• 1 tsp dried basil

• 1 tsp dried thyme

• 2 tsp dijon mustard

• Salt & pepper to taste


1. In a serving bowl, add the chickpeas, tomatoes, cucumber, black olives, red onion, and fresh parsley. Toss together.

2. In a small mixing bowl, combine the dressing ingredients well. Pour over the salad. 3. Toss to combine evenly.

4. Top with the Wellness Warehouse Seed Mix and feta cheese, and enjoy!
