One-Pot Creamy Pasta

  • 10ml extra virgin olive oil
  • 1 onion, diced
  • 2 garlic cloves, crushed
  • 250g mushrooms, sliced
  • 1 tsp salt
  • 1/2 tsp cracked black pepper
  • 1 tsp garlic powder
  • 2 tsp mixed herbs
  • 500ml vegetable stock
  • 800ml coconut milk
  • 400g pasta
  • 150g baby spinach, roughly chopped
  • finely grated parmesan cheese to serve
  1. Drizzle the olive oil in a pan over a medium heat.
  2. Once the oil has heated, add the onion and garlic and fry for 4 - 6 minutes.
  3. Add the mushrooms and fry for a couple of minutes.
  4. Add the salt, pepper, garlic powder and mixed herbs.
  5. Pour in the vegetable stock and coconut cream. Bring to a boil.
  6. Add the pasta and allow to simmer for 20 minutes, or until pasta is cooked through and sauce has thickened.
  7. Mix in the baby spinach and serve warm with grated parmesan.
