Raw Ginger Coconut Date Balls


*1 tsp fresh ginger

*175 g dried dates, pitted

*75 g macadamias

*75 g cashews

*150 g desiccated coconut + extra to coat

*½ tsp salt

*1 tsp ground ginger


1. Grate the ginger on a fine grater and squeeze out the juice.

2. Place all ingredients in a food processor and blend until a dough forms.

3. Roll the mixture into balls. Roll them in extra coconut to coat.

4. Eat immediately or store in an airtight container for up to 2 weeks.
