Gut Health Veggie Soup

Ingredients
  • 10 ml olive oil
  • 1 medium onion, diced 
  • 3 - 4 garlic cloves, crushed 
  • 2 - 3 celery stalks, chopped 
  • 2 - 3 carrots, chopped 
  • 3 cups bone broth 
  • 1 cup tomatoes, chopped 
  • 1 cup potato, diced 
  • 1 cup green beans, chopped 
  • 1 cup garden peas 
  • 2 cups cauliflower florets 
  • 2 tsp dried oregano 
  • 2 tsp dried thyme 
  • 2 - 3 bay leaves 
  • salt and pepper to taste
Method
  1. Drizzle the olive oil in a large pot over a medium-high heat. 
  2. Add the onions and garlic and fry for 2 - 3 minutes, or until onions are soft and translucent. 
  3. Add the celery and carrots, and cook for a further 2 - 3 minutes, or until softened slightly.
  4. Add the remaining vegetables, dried oregano, dried thyme, bay leaves, and seasoning. 
  5. Bring to a boil and then simmer gently for 45 minutes. 
  6. Add the garden peas just before serving. 
  7. Sit back and enjoy!
